Solander Dining and Bar is named after first fleet naturalist Daniel Solander, and is a relaxed and sophisticated dining and bar experience located on the ground floor of West Hotel. Solander Dining offers modern Australian fare, with a food philosophy that embraces and supports the very best regional and seasonal produce from sustainable sources that New South Wales has to offer. Solander Bar offers bespoke botanical-inspired cocktails, no-alcohol cocktails, and a range of boutique Australian and International spirits, wines and craft beers. Enjoy a drink seated at the stunning emerald green terrazzo marble bar, or sit with an aperitivo and bar snack in the open-air “jungle” atrium surrounded by lush green foliage and atmospheric festoon lights. In the morning the bar opens early, making it the perfect spot to order a fresh pastry and coffee, which is supplied by boutique Sydney coffee roasters Single O.
